Sunset, appetizers, drinks, and fellowship. What could be better? My team and I at Table & Thyme recently catered a corporate event at Blackjack Farms here in Birmingham, AL. This was a buffet style dinner accompanied by a full bar and a perfect sunset.
The client we served was Brasfield & Gorrie: a local, private construction and engineering firm. The dinner was held at Blackjack Farm’s “barn” that sat upon a huge hill top overlooking the vast property. Offering wide, green pastures and wooded areas, this venue served as a great backdrop for a sunset event. Event attendees enjoyed perusing the buffet and having a drink or two while looking out over the space.

The starter was a T & T favorite: a BLT Crostini with herb spread, marinated tomato, crispy bacon, and garden chives.
Next up, the salad! We went with a Mini Wedge Skewer. This was a fun twist with iceberg wedge, golden tomato, thinly sliced radish, garden chives, candied pecans, cotija cheese crumbles, and our house green goddess dressing.
The main event was our Pistachio Crusted Pork Tenderloin and Creamy Sun-Dried Tomato Grilled Chicken Breast. The B & G employees loved these!
Can’t forget the sides! Garlic Whipped Potatoes and Bacon-Wrapped Green Bean Bundles with a sweet tea glaze. Southern style of course.
Then we ended the night with delicious White Chocolate Bread Pudding as the sun set over the farms.
This corporate event was a smash hit for us!
