One of our closest partners is Highlands College here in Birmingham, Alabama. My team at Mealfit and Table & Thyme provides all the food for the students and staff on the HC campus. We always enjoy providing the best service and hospitality for groups like this.
My team and I recently catered an event on campus for their entire staff. With the perfect weather here in Birmingham lately, the atmosphere suited the event so well.
The event began with a delicious Table & Thyme grazing table adorned with pimento cheese, chocolate chip cookies, fresh fruit, and more! It served as a wonderful starter for HC staff members to snack on while they mingle before enjoying lunch.
The rest of the meal was prepared buffet style featuring classic American items with southern flair. It’s always fun to take a simple, well-known favorite and put a spin on it.
We did just that with first item: Conecuh Sausage Corn Dogs. These were fried perfectly to golden brown and packed that southern flavor which keeps everyone coming back for more.
Next up was mini Cheeseburger Sliders with house made burger sauce and American cheese. These are so easy to eat and tasty too. Oh, and we can’t forget our hand-breaded crispy chicken tenders. Who doesn’t love chicken fingers?
The star of the show had to be our cucumber tomato salad. This side was so refreshing and served as the perfect contrast on this warm Spring day. The fresh cucumbers and tomatoes are tossed with our house vinaigrette and red onion.
Finally we added our creamy southern slaw and potato wedges to compliment the spread.
Meals like these are always fun to do especially right here in Birmingham, AL, with such close partners like Highlands College.
